Freshly fried kettle chips are just so delicious and addicting that store-bought can't compete. Some things are worth the extra effort, and homemade kettle chips are definitely one of those things. They are light, crispy, and we're giving you 3 different flavor combos to make them your own.

Ingredients

2 pounds potatoes , Russet Potatoes (They are a must because they are higher in starch and will hold up best for freshly fried kettle chips)
- 6-8 cups oil for frying
- 1/4 cup parmesan cheese , finely grated
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 1 teaspoon dried parsley
- 2 tablespoons sea salt
- 1 tablespoon pepper , freshly cracked
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 2 tablespoons buttermilk powder
- 2 tablespoons dried dill
- 1 tablespoon onion powder
- 2 teaspoons garlic powder
- 1 teaspoon salt

1/2 teaspoon sugar
Garlic Parmesan Seasoning
Cracked Pepper Sea Salt Seasoning
Sour Cream and Onion Seasoning
Directions
Wash potatoes. Thinly slice the potatoes using a mandolin, knife or food processor and put them directly into a bowl of cold water.
- Heat the oil in a heavy duty pan until the oil reaches 350 degrees Fahrenheit.
- Rinse the starches off the potatoes and drain off all water. Place the potato slices on a towel and dry thoroughly.
Working in batches, place a handful of the slices carefully into the oil and fry. Do so by lowering the potatoes into the oil with a metal slotted spoon.
Once they have reached a golden color, about 60-90 seconds, remove from oil and place onto a paper-towel lined cookie sheet.
Season with your seasoning of choice immediately while the chips and oil are still hot. Ensuring that the seasoning sticks as much as possible. Let cool and enjoy!
Recipe Note
The size of batch will determine how long it will take to cook. Smaller batches work best!
Best served with onion dip!
