Ingredients

1 (8 oz) 'New York' Strip Steak
or
'New York' Strip Steak - LIMITED RESERVE
¼ teaspoon Diamond Crystal kosher salt
¼ teaspoon freshly ground black pepper
½ tablespoon butter

Directions

Preheat the oven to 500 degrees F.
Heat cast iron skillet over high heat until smoking hot (about 5-7 minutes).
In the meantime, season both sides of the steak with salt and black pepper (or seasoning of choice).
Add butter and the steak to the hot skillet. Cook each side until a nice brown crust forms on each side (about 2 minutes on each side). Cook the fat strip for 30 more seconds.
Carefully transfer the skillet into the oven. Roast the steak to medium rare (about 3-4 minutes).

Once done remove the steak and place the on a plate. Loosely cover it with foil and allow it to rest for 5 minutes, serve, and enjoy.
