Imagine the best steakhouse/diner burger you’ve ever had… and now imagine making it at home. This is the classic and ultimate juicy burger you’ve been craving.

Ingredients

1/2 teaspoon of unsalted butter
2 pounds ground steak
Kosher salt and black pepper to taste
8 slices cheese of choice (optional)
8 hamburger buns, lightly toasted (optional, but highly suggested)
Lettuce leaves, sliced tomatoes and condiments/toppings of choice

Directions

Add butter to a large cast-iron or stainless-steel skillet and place over medium heat. Divide ground steak into 8 small piles around 4 ounces each. Gently round them out to be about 2 inches in height. Do not form patties yet.
Increase heat to high. Place half into the skillet with plenty of distance between them. Using a stiff metal spatula, press down on each one to form a burger that is around 4 inches in diameter and about 1/2 inch thick (or size to bun). Season with salt and pepper.
Cook without moving until patties have achieved a deep, burnished crust, a little less under 2 minutes. Use the spatula to scrape free and carefully turn burgers over. If using cheese, lay slices on meat.
Continue to cook until meat is cooked through, approximately a minute or so longer. Remove burgers from skillet, place on buns and prepare as desired. Repeat process with remaining burgers.

Recipe Note

Tip:

To prevent pattie from potentially sticking to the spatula place parchment paper on top of the meat before smashing.
Cook on high heat to get the crispy edges without over cooking.
