Ingredients
2 pounds potatoes (yukon gold or red)
3 tablespoons olive oil
1 tablespoon lemon juice , freshly squeezed
2 teaspoons garlic powder
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried oregano
1/4 cup shredded cheese , parmesan or cheddar
Directions
Preheat grill to medium-high heat. Scrub the potatoes clean and cut them into wedges.
Place the potatoes in a large bowl and drizzle them with olive oil.
Add lemon juice, garlic powder, salt, pepper, thyme, rosemary and oregano and toss until wedges are well coated.
Using 4 large foil sheets, divide the potatoes into 4 and seal them up to create foil packets. Use 2 layers if needed.
Place on grill and let cook for 20 minutes. Occasionally rotate within the grill in case there are hot spots.
Carefully remove from grill onto a cooling sheet. Top with either sour cream or cheese.
