This vegetable is summers most prolific produce! Grilled zucchini is a quick, simple, and absolutely delicious way to sneak some veggies into your diet and is the perfect pairing at any cookout.

Ingredients
8 medium-large sized zucchini trimmed
- 1 lemon juiced (about 1/4 cup)
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
Directions
Preheat your grill to medium heat, about 350 degrees F.
Cut each zucchini in half, slicing lengthwise.
Squeeze lemon juice over zucchini halves and lightly coat each half with olive oil.
Season lightly/to taste with salt, and sprinkle Italian seasoning and garlic powder over.
Place zucchini halves directly onto a well oiled grate, flesh side down to start. Cook with the lid closed, about 10 to 15 minutes (or until tender), flipping halfway through.
Cut and serve as desired and enjoy!
Recipe Note
You can grill zucchini halved, on skewers, or you can cut them into slices and grill them on skewers or in foil packets.
